Ingredients
For the Marinade:
4 chicken thighs and/or drumsticks (skin-on, bone-in)
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tsp allspice (ground)
1/2 tsp smoked paprika
1 tsp ground cinnamon
1 tsp cayenne pepper (optional, for heat)
1/2 cup dark rum
1/4 cup lime juice (freshly squeezed)
1/4 cup orange juice (freshly squeezed)
1/4 cup soy sauce
2 tbsp honey
1 tbsp brown sugar
For the Glaze:
1/4 cup dark rum
2 tbsp honey
1 tbsp brown sugar
2 tbsp butter
1 tbsp lime juice
Optional Garnish:
Fresh cilantro, chopped

Instructions
Prepare the Marinade:
In a large bowl, combine olive oil, garlic, ginger, allspice, smoked paprika, cinnamon, cayenne (if using), rum, lime juice, orange juice, soy sauce, honey, and brown sugar. Mix well.Marinate the Chicken:
Place the chicken pieces in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal or cover and refrigerate for at least 4 hours or overnight for the best flavor.Cook the Chicken:
Grilling: Preheat your grill to medium heat. Remove chicken from the marinade (reserve the marinade for later). Grill chicken for 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F (74°C).
Oven-Baking: Preheat your oven to 400°F (200°C). Place the chicken on a lined baking sheet. Bake for 35-40 minutes, basting with the reserved marinade halfway through.
Prepare the Glaze:
While the chicken cooks, heat a small saucepan over medium heat. Add rum, honey, brown sugar, butter, and lime juice. Simmer until it thickens slightly (about 5-7 minutes), stirring occasionally.Glaze and Finish:
In the last 5 minutes of grilling or baking, brush the chicken generously with the glaze for a sticky, caramelized finish.Serve:
