Ingredients
For the Chicken:
500 g chicken (bone-in, curry cut)
3 tbsp oil or ghee
2 medium onions, finely chopped
2 medium tomatoes, pureed
2 tbsp ginger-garlic paste
3 green chilies, slit
1/2 cup plain yogurt (whisked)
1/4 cup fresh cream (optional, for richness)
1/2 cup water (or as needed for gravy consistency)
Spices:
1 tsp cumin seeds
2 bay leaves
3-4 cloves
2 green cardamom pods
1 small cinnamon stick
1 tsp turmeric powder
1 tsp red chili powder (adjust to taste)
1 tsp coriander powder
1/2 tsp garam masala
Salt, to taste
For Garnish:
2 tbsp fresh coriander leaves, chopped
1 tsp kasuri methi (dried fenugreek leaves, crushed)
Instructions
1. Prepare the Ingredients:
Chop onions finely and puree the tomatoes.
Whisk the yogurt to ensure it's smooth and lump-free.
Keep all the spices ready, as the cooking process moves quickly.
2. Heat the Oil and Temper Spices:
In a handi or a heavy-bottomed pan, heat the oil or ghee over medium heat.
Add cumin seeds, bay leaves, cloves, cardamom, and cinnamon. Sauté for 30 seconds until fragrant.
3. Sauté the Onions and Ginger-Garlic Paste:
Add the finely chopped onions and sauté until golden brown. This step is crucial for a flavorful base.
Add the ginger-garlic paste and green chilies. Cook for 2-3 minutes until the raw smell disappears.
4. Add the Tomatoes and Spices:
Stir in the tomato puree and cook for 5-7 minutes until the oil starts separating from the masala.
Add turmeric, red chili powder, coriander powder, and salt. Mix well.
5. Add the Chicken:
Add the chicken pieces to the handi and mix them well with the masala.
Cook for 7-8 minutes on medium heat, stirring occasionally, until the chicken starts to brown slightly.
6. Add Yogurt and Simmer:
Lower the heat and slowly add the whisked yogurt, stirring continuously to prevent curdling.
Add 1/2 cup water (or more if you prefer a thinner gravy) and bring the mixture to a gentle simmer.
7. Cook Until Tender:
Cover the Handi with a lid and let the chicken cook on low heat for 20-25 minutes, stirring occasionally, until the chicken is tender, and the gravy thickens.
8. Add Cream and Garnish:
Stir in the fresh cream for a richer flavor (optional).
Add garam masala and crushed kasuri methi. Mix well and simmer for another 2 minutes.
Garnish with chopped coriander leaves.
