- 1 teaspoon red chili powder (optional)

- 2 tablespoons coconut oil or vegetable oil

- Salt to taste

- Fresh coriander leaves for garnishing

Instructions:

1. Preparation:

- Clean and cut the fish fillets into medium-sized pieces.

- Marinate the fish with salt and turmeric powder. Let it sit for about 15-20 minutes.

2. Spice Paste:

- In a dry pan, roast coriander seeds, cumin seeds, and dried red chilies until aromatic. Let them cool.

- Grind the roasted spices, grated coconut, garlic, and ginger into a smooth paste using a little water.

3. Cooking:

- Heat coconut oil in a pan. Add finely chopped onions and sautΓ© until translucent.

- Add the spice paste to the pan and cook on medium heat. Stir continuously to prevent sticking.

- Add turmeric powder and red chili powder (if using) to the paste. Cook for 2-3 minutes until the raw smell of the spices disappears.

- Add tamarind pulp and 2 cups of water to the mixture. Bring it to a boil.

- Lower the heat and gently add the marinated fish pieces to the curry. Be careful while handling the fish to avoid breaking.

- Add salt to taste and simmer the curry for about 10-12 minutes, or until the fish is fully cooked and the flavors are well combined.

- Add slit green chilies towards the end of the cooking process.

4. Serving:

- Once cooked, remove from heat. Garnish with fresh coriander leaves if desired.
