Ingredients:

- 2 tablespoons olive oil

- 1 pound beef stew meat, cut into bite-sized pieces

- 1 medium onion, diced

- 3 cloves garlic, minced

- 3 carrots, sliced

- 3 celery stalks, sliced

- 2 large potatoes, diced

- 1 can (14.5 ounces) diced tomatoes (with juices)

- 1 cup green beans, trimmed and cut into 1-inch pieces

- 8 cups beef broth

- 2 tablespoons tomato paste

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- 1 bay leaf

- Salt and pepper, to taste

- Fresh parsley, chopped (for garnish)

Instructions:

1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the beef and set aside.

2. In the same pot, add the onion, carrots, and celery. Cook until the vegetables start to soften, about 5 minutes.
