Karnataka Kosambari Recipe

Introduction

Kosambari is a traditional salad from Karnataka, India, known for its vibrant colors and refreshing taste. Ingredients:

- 1/2 cup split yellow moong dal (mung beans), soaked for 1-2 hours

- 2-3 green chilies, finely chopped

- 2-3 tablespoons freshly grated coconut

- 2 tablespoons lemon juice

- Fresh coriander leaves, finely chopped

- Salt to taste

For the Tempering:

- 1 teaspoon mustard seeds

- 1-2 dried red chilies

- 1 sprig of curry leaves

- 1 teaspoon oil

Instructions:

1. Preparation:

- Soak the yellow moong dal in water for 1-2 hours until it softens. Drain and set aside.

- Finely chop the cucumber and grate the carrot. Set aside.

2. Mixing:

- In a mixing bowl, combine the soaked moong dal, chopped cucumber, grated carrot, and freshly grated coconut.

3. Tempering:

- Heat oil in a small pan. Add mustard seeds and let them splutter.

- Add dried red chilies and curry leaves. Sauté for a few seconds until aromatic.

4. Combining:

- Pour the tempering over the mixed ingredients in the bowl.

- Add finely chopped green chilies, lemon juice, and salt to taste. Mix well.

5. Serving:

- Garnish with fresh coriander leaves.

- Serve the Kosambari fresh, as a salad or a side dish.

Tips:

- Adjust the amount of green chilies according to your spice preference.

- You can also add finely chopped tomatoes or raw mango for an extra tangy twist.

- Kosambari is best served fresh to retain its crunchiness and vibrant flavors.
