Introduction

Ingredients:

For the Misal:

- 1 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 2 teaspoons garam masala

- 1 teaspoon goda masala (optional, for authentic taste)

- 1/2 teaspoon asafoetida

- Salt to taste

- 2 tablespoons oil

- Fresh coriander leaves for garnishing

- Lemon wedges for serving

For Toppings:

- 1 cup farsan (mixed fried savory snacks)

- Finely chopped onions

- Fresh coriander leaves

- Sev (crispy chickpea flour noodles)

For Serving:

- Pav (Indian bread rolls)

- Lemon wedges

Instructions:

1. Preparation:

- Soak the sprouted moong beans in water for a few hours, or overnight, to soften them slightly.

- Boil the sprouts until they are tender but not mushy. Drain and set aside.

- Boil the potato, peel, and cube it. Set aside.

2. Cooking:

- Heat oil in a pan. Add mustard seeds and let them splutter.

- Add cumin seeds and asafoetida. SautΓ© for a few seconds.

- Add finely chopped onions and sautΓ© until they turn golden brown.

- Add ginger-garlic paste and cook until the raw smell disappears.

- Add chopped tomatoes and cook until they become soft and the oil starts separating from the mixture.

- Add turmeric powder, red chili powder, garam masala, and goda masala (if using). Mix well and cook for a few minutes.

- Add the boiled sprouts and cubed potatoes to the pan. Mix well to coat them with the spices.

- Add salt to taste and a cup of water to create a slightly thick curry. Bring it to a boil and let it simmer for 5-7 minutes.

- Add slit green chilies and simmer for another 2-3 minutes.

3. Serving:

- Pour the Misal into bowls.

- Top with a generous amount of farsan, finely chopped onions, fresh coriander leaves, and sev.

- Serve hot with pav and lemon wedges on the side.

Tips:

- Adjust the spice levels according to your preference.

- For an authentic touch, use goda masala, which is a traditional Maharashtrian spice mix.
