Malai Chicken Curry, also known as Murgh Malai, is a decadent dish featuring tender chicken pieces cooked in a luxurious, velvety white gravy. Loved for its creamy texture and exquisite flavor, this classic Indian curry is a true delight for all chicken lovers.

Ingredients (Serves 2)
For the Chicken:
2 pounds boneless chicken thighs, cut into 2-inch pieces
For Marination:
2 tablespoons lime juice
2 teaspoons salt
1 teaspoon white pepper powder
For the Curry:
3 tablespoons oil
3 cups yellow onion, sliced
2 green chili peppers, diced
2-inch ginger, chopped
8 cloves garlic, chopped
24 cashews
2 tablespoons ghee or butter
6 tablespoons plain yogurt, whisked
1 cup water
1/2 cup fresh cream
1 1/2 teaspoons garam masala (adjust to taste)
2 tablespoons dried fenugreek leaves (kasoori methi), crushed
Whole Spices:
8 green cardamoms (elaichi)
24 black peppercorns
10 cloves (laung)
2 teaspoons cumin seeds (jeera)
Ground Spices:
2 teaspoons cumin powder
2 teaspoons coriander powder (dhaniya powder)
1 teaspoon white pepper powder (adjust to taste)
1/2 teaspoon salt
Cooking Method
Step 1: Marination
In a bowl, mix the chicken pieces with lime juice, salt, and white pepper powder.
Set aside for 30 minutes to allow the flavors to infuse.
Step 2: Prepare the Curry Base
Heat oil in a large pan over medium-high heat. Add sliced onions and sautΓ© for 3 minutes until translucent.
Add green chili, ginger, garlic, and cashews. SautΓ© for another 2 minutes.
Transfer the mixture to a blender, let it cool slightly, then add 1/4 cup of water and blend to a smooth paste.
Step 3: Cook the Spices
In the same pan, melt the ghee or butter over medium heat.
Add the whole spices (cardamom, peppercorns, cloves, and cumin seeds) and sautΓ© for 30 seconds until aromatic.
Step 4: Build the Curry
Add the prepared onion-cashew paste and cook over medium heat for 5 minutes, stirring occasionally, until the color deepens.
Add the marinated chicken pieces and fry on high heat for 4β5 minutes until the chicken is white on the outside.
Stir in the ground spices (cumin powder, coriander powder, white pepper powder, and salt) and fry for 3β4 minutes.
Step 5: Simmer the Curry
Lower the heat and add the whisked yogurt, stirring continuously for 3 minutes until the oil separates.
Pour in water, give it a good stir, and cover the pan with a lid. Cook on low heat for 10β12 minutes until the chicken is tender.
Step 6: Final Touches
Remove the lid, stir in the fresh cream, and sprinkle garam masala.
Crush the kasoori methi between your palms and add it to the curry. Stir well and let it simmer for 2β3 minutes.
Step 7: Serve the Malai Chicken Curry hot with freshly made naan, roti, or basmati rice.
