Mirchi Ka Halwa: A Unique Sweet Treat

- 2 tablespoons of khoya (dried evaporated milk solids)
Instructions:
1. Prepare the Chilies: Wash the green chilies thoroughly, slit them lengthwise, and remove the seeds to reduce the spiciness.
2. Boil the Chilies: Boil the deseeded chilies in water for about 5-7 minutes to soften them. Drain and set aside.
3. Blend the Chilies: Once cooled, blend the chilies into a smooth paste. You can add a little water if required.
4. Cook with Milk: Heat 1 liter of milk in a deep pan and bring it to a boil. Add the green chili paste and let it cook on a medium flame until the mixture thickens and reduces by half. Stir continuously to avoid sticking.
5. Sweeten It Up: Add the sugar to the thickened milk and continue to cook, stirring occasionally, until the sugar has dissolved and the mixture has thickened again.
6. Enhance with Khoya and Cardamom: Add the khoya and cardamom powder, and mix well. Cook for another 5-6 minutes.
7. Add Ghee: In a separate pan, heat the ghee and add the cashew nuts and almonds. Fry until they are golden brown, then add them to the halwa mixture. Mix well.
8. Serve: Once everything is well combined and the mixture has a thick, halwa-like consistency, remove from heat. Let it cool slightly before serving.
Serve it warm or at room temperature, garnished with a few more fried nuts if desired. "Mirchi Ka Halwa" is best enjoyed with a dollop of rabri or a scoop of vanilla ice cream.
