Sevaiyan Pulao Recipe - A Yummy and Healthy Tiffin Delight!
Ingredients:
- 1 cup Sevaiyan (vermicelli)
- 1 small carrot, finely chopped
- 1 small capsicum, finely chopped
- 1/2 cup green peas
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1 tablespoon oil or ghee
- A pinch of turmeric powder
- Salt to taste
- Chopped coriander leaves for garnishing
- Optional: A handful of roasted peanuts for added crunch
Healthy Tips:
1. Whole Wheat Sevaiyan: Opt for whole wheat vermicelli to make it richer in fiber and nutrients.
2. Add More Veggies: Feel free to include more vegetables like bell peppers, broccoli, or even sweet corn to make it more colorful and nutritious.
3. Protein Boost: Adding a handful of roasted peanuts or boiled chickpeas can enhance the protein content.
4. Healthy Fat: Use ghee instead of oil for a dose of healthy fats, which are great for growing kids.
Instructions:
1. Heat the oil or ghee in a pan over medium flame.
2. Add the mustard seeds and cumin seeds. Let them splutter.
3. Add the chopped vegetables and sautΓ© for 2-3 minutes until they are slightly softened.
4. Add the turmeric powder and salt. Mix well.
5. Add the sevaiyan (vermicelli) to the pan and sautΓ© for a couple of minutes until it is lightly toasted.
6. Pour in 1 1/2 cups of water and bring the mixture to a boil.
7. Reduce the flame to low, cover, and let it cook until the sevaiyan is soft and the water is absorbed (about 5-7 minutes).
8. Garnish with chopped coriander leaves and optional roasted peanuts.
9. Serve hot or cool before packing it into the tiffin box.
